Vignoble Nicolas Therez, Serres-Moi 2021

Crémant from the Haute Vallée de l'Aude, where the altitude and cooler location near the Pyrenees provide fresh white grapes and Pinot Noir. Organically grown, hand-picked in 25 kg crates. Made in the same way as Champagne (Méthode traditionnelle) with a minimum of 36 months on the lees, without added sugar.

What you smell
White fruit and citrus, with a nutty tone leaning towards hazelnut. Fresh and understated, not a sweet nose.

What you taste
Fine, persistent mousse that makes the wine light and crisp. Dry and clear, with that same hazelnut in the background and a ripe, full core due to the long lees aging. Long, salty finish. Aging potential of more than ten years.

How it's made
60% Chardonnay, 20% Chenin, 20% Pinot Noir. Organic (for more than ten years), hand-harvested, yield of 30 hl/ha. Second fermentation in bottle, minimum 36 months on the lees, no dosage.

Serving
Serve between 6 and 8°C. Use a white wine glass instead of a flute: this will better release the complexity than a narrow flute.

Pairs well with

  • Grilled sea bass or dorado: the fresh acidity and bubbles cut through the fatty fish and elevate the grilled flavor.
  • Chicken in cream sauce: the mousse lightens the sauce, and the nutty tone complements roasted aromatics.
  • Aged Comté or Gruyère: the hazelnut in the wine directly connects with the nutty core of the cheese.

Nicolas Therez is een familiebedrijf in het dorpje Serres, in het uiterste zuidoosten van Limoux, waar de families Therez en Caruso in 2008 hun vijfendertig hectare wijngaard omschakelden naar biologische landbouw. Ze zijn de enige onafhankelijke wijnmakers op dit specifieke stuk terroir.
