Vignoble Nicolas Therez, Petit Louis Chardonnay/Chenin Blanc 2024

From the Haute Vallée de l'Aude, a cooler and higher-lying part of the Languedoc close to the Pyrenees. This climate is ideal for white grapes: ripe fruit, but with tension. The domain has been organically certified for over ten years, with manual harvesting in small crates.

What you smell
White flowers and citrus, with a slight hint of white-fleshed fruit such as peach and pear.

What you taste
Smooth and refined on the palate, with a fresh citrus note that keeps the wine lively without becoming sharp. The Chenin adds extra length and a soft mouthfeel. Ready to drink, but will last for another 3 to 5 years.

How it's made
80% Chardonnay, 20% Chenin Blanc. Organically grown, hand-harvested in 25 kg crates. Yield limited to 45 hl/ha for more concentration.

Serve
Between 6 and 8°C, in a regular white wine glass. Do not decant.

Pairs well with

  • Sushi and sashimi: the citrus freshness cuts through fatty fish like salmon and tuna without overpowering the delicate taste.
  • Grilled sea bream or sea bass: the white-fleshed fruit and smooth texture complement lean, grilled fish.

Nicolas Therez is een familiebedrijf in het dorpje Serres, in het uiterste zuidoosten van Limoux, waar de families Therez en Caruso in 2008 hun vijfendertig hectare wijngaard omschakelden naar biologische landbouw. Ze zijn de enige onafhankelijke wijnmakers op dit specifieke stuk terroir.
