Vignoble Nicolas Therez, Cuvée Serres-Moi Chardonnay 2024

From the Haute Vallée de l'Aude, where the vineyards are nestled against the Pyrenees and benefit from cooler nights at altitude. Nicolas Therez has been working organically here for over ten years, with old Chardonnay vines hand-harvested in 25 kg crates. The yield is deliberately kept low at 35 hl/ha, which benefits concentration.

What you smell
Freshly baked brioche and hazelnut, with a soft vanilla note in the background.

What you taste
Creamy and smooth on the palate, with the freshness provided by the altitude. Barrel aging gives a round, soft-vanilla finish without becoming heavy. Can age well for 5 to 7 years.

How it's made
100% Chardonnay from old vines, organically grown. After pressing, both fermentation and aging take place in oak barrels, which explains the brioche and nutty notes.

Serving
Serve at 8 to 10°C in a large white wine glass. Decanting is not necessary.

Pairs well with

  • Grilled langoustines with lemon butter: the creamy texture of the wine complements the butter, while the freshness keeps the dish light.
  • Roast chicken with tarragon: the nutty and vanilla notes match the roasted skin, and the acidity cuts through the fat.
  • Aged Comté: the hazelnut notes in both the cheese and wine enhance each other.

Nicolas Therez is een familiebedrijf in het dorpje Serres, in het uiterste zuidoosten van Limoux, waar de families Therez en Caruso in 2008 hun vijfendertig hectare wijngaard omschakelden naar biologische landbouw. Ze zijn de enige onafhankelijke wijnmakers op dit specifieke stuk terroir.
