Vignoble Nicolas Therez, Cuvée Nature Trésor

Crémant from the Haute Vallée de l'Aude, a higher-altitude part of Languedoc against the Pyrenees. The cooler climate provides a freshness rarely found in southern sparkling wines. Organically farmed for over ten years, hand-harvested in small 25 kg crates, and aged on lees for at least 24 months.

What you smell
Fresh and elegant, with notes of toasted hazelnut and dried fruit. Subtle brioche-like due to the long aging.

What you taste
Fine, persistent mousse that glides smoothly over the tongue. Crisp freshness balanced with a riper, nutty core. Brut nature means: zero to 2 grams of sugar, so bone dry and straightforward. Good length, and it can age for another five years.

How it's made
60% Chardonnay, 20% Chenin, 20% Pinot Noir. Traditional method: secondary fermentation in the bottle, at least 24 months on lattes. Low yield of 30 hl/ha. No dosage added.

Serving suggestion
Between 6 and 8 °C. A tulip-shaped glass works better than a flute: more room for the aroma.

Nicolas Therez is een familiebedrijf in het dorpje Serres, in het uiterste zuidoosten van Limoux, waar de families Therez en Caruso in 2008 hun vijfendertig hectare wijngaard omschakelden naar biologische landbouw. Ze zijn de enige onafhankelijke wijnmakers op dit specifieke stuk terroir.

Languedoc-Roussillon is de grootste wijnstreek van Frankrijk en leverde lang vooral goedkope liters. In de koele hoek rond Limoux gebeurt iets anders: daar staan Chardonnay, Pinot Noir en Chenin op hoogte, met Atlantische wind in plaats van mediterrane hitte.
