Vignoble Nicolas Therez, Cuvée Nature Tendre
A soft, slightly sweet sparkling wine from the Haute Vallée de l'Aude, the cooler hinterland of Limoux towards the Pyrenees. Made from 100% Mauzac from old vines, organically grown (certified, for over ten years). The méthode ancestrale provides natural bubbles without added sugars or liqueur.
What you smell
Intense nose of ripe apple, with hints of pear and white fruit.
What you taste
Soft and harmonious, with fine, persistent bubbles. The natural residual sugar (70 to 80 g/l) makes the wine distinctly sweet, but the fresh apple note keeps it balanced. Low in alcohol (7%), which makes it light and approachable.
How it's made
Hand-harvested in 25 kg crates, only healthy, ripe grapes. The méthode ancestrale: fermentation is completed in the bottle without the addition of sugar or liqueur, preserving the bubbles and natural residual sugar. Matured on the lees for at least 9 months. Yield: 30 hl/ha.
Serving
Serve between 6 and 8°C. Drink within 3 to 5 years. No decanting needed. A tulip-shaped glass holds the bubbles nicely.
