Vignoble Nicolas Therez, Cuvée Nature Tendance Rosé

An organic crémant from the Haute Vallée de l'Aude, where the altitude and proximity to the Pyrenees ensure cooler nights and fresh grapes. The domain has been working according to organic farming standards for over ten years and harvests by hand in small 25 kg crates. Made according to the traditional method with a minimum of 12 months on the lees.

What you smell
Fresh strawberry and blackberry, with a light floral hint. Elegant and inviting, not sweetish.

What you taste
Fine, persistent bubbles that keep the glass light. Red fruit (wild strawberry, blackberry) with a dry finish: it contains 6 g/L of sugar, so you taste fruit without sweetness. Can be stored for approximately five years.

How it's made
50% Chardonnay for freshness and structure, 30% Pinot Noir for red fruit and color, 20% Chenin for body. Hand-harvested, organically certified, traditional method with secondary fermentation in the bottle and a minimum of 12 months of aging on the lees. Dosage: 6 g/L.

Serving
Serve at 6 to 8 °C in a tulip-shaped glass. Do not decant.

Pairs well with

  • Aperitif with salted almonds or olives: the bubbles and freshness wash away the salt and stimulate the taste buds.
  • Grilled sea bass or sea bream: the light red fruit and dry finish leave the fish intact without dominating.
  • Strawberry tart or red fruit dessert: the wine echoes the fruit on the plate and remains dry enough not to become sticky.

Nicolas Therez is een familiebedrijf in het dorpje Serres, in het uiterste zuidoosten van Limoux, waar de families Therez en Caruso in 2008 hun vijfendertig hectare wijngaard omschakelden naar biologische landbouw. Ze zijn de enige onafhankelijke wijnmakers op dit specifieke stuk terroir.
