Terre d'Arengo, Savage 2021

Savage was born from the idea of harvesting grapes with more concentration and softer tannins, through adapted planting density and pruning. It is the first Sangiovese from the house to be aged in barrique, combined with Merlot. The vineyards are located at an altitude of 300 meters, on sand, limestone, and clay with pieces of rock in the soil.

What you smell
Small red fruits such as strawberry and raspberry, with red rose, tobacco, and cocoa in the background. Also a spicy, balsamic note.

What you taste
Full-bodied and velvety on the palate, with fresh acidity that keeps the fruit vibrant. The tannins provide structure without drying out your mouth. Well-balanced and ready to drink until approximately 2031.

How it's made
Merlot and Sangiovese, gently pressed to protect the grapes. The must was slowly macerated for color and soft tannins. Malolactic fermentation in barrique, followed by about 15 months of aging in French oak tonneaux.

Serving
Serve at 16 to 18 degrees. Decanting for an hour benefits the wine. Use a spacious glass.

Pairs well with

  • Venison steak with cocoa crust and blueberry sauce: the cocoa and fruit notes in the wine mirror the dishes, while the acidity keeps the game fresh.
  • Duck à l'orange with oriental spices: the spicy note and red fruit complement the sweet citrus and spices.
  • Aged cheese such as pecorino: the soft tannins and freshness cut through the fat of the cheese.

Terre d'Arengo ligt op een heuveltop bij de Sibillijnse bergen in Marken, waar vader en dochter samen een verwaarloosd stuk land hebben omgevormd tot wijngaard en olijfgaard. Minimale interventie, laag zwavelgebruik en handmatige oogst staan er centraal.

Marken ligt aan de Adriatische kust van Italië, tussen de Apennijnen en de zee, en is een streek die minder bekend is dan haar geburen Toscane en Umbrië. De streek draait om Verdicchio, maar bij ons vooral om de mindere bekende Pecorino en Passerina.
