Terre d'Arengo, Pecorante 2023

A sparkling wine made using the ancestral method, with secondary fermentation in the bottle. The grapes grow at an altitude of 300 meters on a soil of sand, limestone, and clay with stone fragments. Harvesting deliberately takes place in the second week of August to retain freshness and acidity.

What you smell
Citrus (lemon, citron) and tropical fruits like pineapple and passion fruit. Beneath that, light floral notes.

What you taste
Fine, persistent bubbles and a full, round mouthfeel. The high acidity keeps it crisp and fresh, with a salty, stony undertone from the soil. Long, clear finish.

How it's made
Pecorino and Sangiovese, vinified using the ancestral method. The wine ages sur lie (on the lees), which gives extra body and a creamy texture.

Serving
Serve chilled at 8 to 10 degrees in a tulip-shaped glass. Decanting not necessary.

Pairs well with

  • Oysters and raw fish: the high acidity and salty undertone cut through the briny flavors and keep your palate fresh.
  • Sushi: the bubbles and freshness lift the rice and fatty fish without overpowering them.
  • Mozzarella and fresh cheeses: the citrus fruit contrasts with the creaminess and keeps every bite light.
