Tenuta San Jacopo, Poggio ai Grilli Riserva 2021
An organic Chianti Riserva from the hills of Cavriglia, at an altitude of 280 meters. The estate has existed since 1737 and works with hand-picked grapes and low yields. Only 10,000 bottles per vintage.
What you smell
Sour cherry and plum, with sweet spices, tobacco, leather, and a balsamic note.
What you taste
Warm and fruity, with a round mouthfeel and firm but finely polished tannins that provide structure without drying. A salty, savory note in the finish provides length. Ready to drink now, but can age for another five to eight years.
How it is made
90% Sangiovese, 10% Montepulciano. Gentle pressing, fermentation in stainless steel at controlled temperature (25 to 30 days). Complete malolactic fermentation in barrique. 24 months aging in French barriques (1/4 new, 3/4 second and third fill), followed by 6 months in bottle.
Serving
Serve at 18 to 20 degrees Celsius. Opening an hour beforehand or decanting briefly helps. Burgundy glass or wide Bordeaux glass.
Pairs well with
-
Bistecca alla Fiorentina: the tannins cut through the fat of the red grilled beef and the cherry fruit beautifully complements the grilled crust.
-
Pappardelle with wild boar ragout: the balsamic and leather notes enhance the deep, stewed flavors of the game.
-
Aged pecorino with fig jam: the salty, savory character of the wine mirrors the cheese, while the ripe fruit captures the sweetness of the jam.
