Tenuta San Jacopo, Orma del Diavolo 2019

Tenuta San Jacopo is located in Valdarno di Sopra, a small Tuscan appellation between Florence and Arezzo that was one of the first in Italy to be officially recognized. This wine comes from an organic plot of 3.5 hectares at an altitude of 280 meters. Only 8,000 bottles per vintage.

What you smell
Elderberry, medlar, and blackberry, with spicy notes and a hint of incense.

What you taste
Juicy and broad on the palate, with a full body. The tannins are fine and provide structure without drying out your mouth. Smooth, but with a straight line and a long finish. Good for cellaring.

How it's made
Sangiovese (50%), Merlot (30%), and Cabernet Sauvignon (20%), hand-harvested. Fermentation in stainless steel tanks at controlled temperature for 25 to 30 days. Full malolactic fermentation in barriques. Followed by 24 months of aging in French barriques (1/4 new, 3/4 second and third use) and another 12 months in the bottle.

Serving
Serve at 18 to 20 degrees in a large Burgundy glass. Decanting for an hour will further open it up.

Pairs well with

  • Bistecca alla Fiorentina: the wine's structure stands up to the fat and crispy crust of the meat.
  • Pappardelle with wild boar ragu: the spicy and berry fruit notes complement the depth of slow-cooked game.
  • Aged pecorino: the salty, spicy notes of the cheese bring out the juicy fruit.

Tenuta San Jacopo ligt tussen Chianti Classico en Valdarno, op een landgoed met een villa uit 1750 en een naam die teruggaat op een stenen kapel die al op zestiende-eeuwse kaarten stond. In 2002 kochten drie broers uit Milaan het vervallen landgoed en bouwden het biologisch weer op.
