Tenuta San Jacopo, Erboli 2022
Tenuta San Jacopo is located in Castiglioni, Tuscany, and has been cultivating the same land since 1737, with organic certification. The Erboli comes from a 0.3-hectare plot at an altitude of 300 metres, with vines averaging 30 years old. A small production of 1,000 bottles.
What you smell
Citrus, green apple and white melon. Fresh, no heavy floral notes.
What you taste
Juicy and balanced, with enough body to avoid being thin. The acidity provides tension without being sharp, and the finish remains fruity. An approachable wine with more depth than you’d expect from Trebbiano.
How it's made
100% Trebbiano, hand-harvested in crates. The grapes undergo cold maceration with dry ice at 8-10 degrees Celsius, with 3 hours of skin contact. Half is fermented in stainless steel, half in ceramic amphora. The stainless steel portion then ages for another 6 months in tonneaux with daily bâtonnage during the first month. This combination explains the freshness (amphora and stainless steel) plus the extra texture and creaminess (bâtonnage).
Serving
Serve at 8 to 10 degrees Celsius in a standard white wine glass. Decanting is not necessary.
