Tenuta San Jacopo, Caprilius 2018

Tenuta San Jacopo is located in the hills of Cavriglia at an altitude of 300 meters, in the heart of Tuscany. Caprilius is an organic wine made from the Montepulciano grape, a grape rarely found here in its pure form. Only 2,600 bottles per vintage.

What you smell
Stewed cherry, plum skin, chocolate and licorice, with a hint of dried herbs.

What you taste
Medium to full-bodied, the tannins provide grip without drying out your mouth, the mouthfeel is velvety. Savory undertones and a juicy, long finish.

How it's made
100% Montepulciano from organically managed vineyards on a southeast-facing slope. Hand-picked mid-October, yield 4.5 tons per hectare. Fermentation in stainless steel at 28-30 degrees, 25-30 days of skin contact. Matured for 18 months in French tonneaux (1/5 new, rest second and third fill, Allier oak, medium toasting), followed by 12 months of bottle aging.

Serving
Serve at 18 to 20 degrees in a large Burgundy glass. Decanting for an hour will further open it up.

  • Lamb stew with rosemary: the dried herbs in the wine pick up the rosemary, the structure holds the stewed meat.
  • Pappardelle with wild boar ragu: the juicy fruit layer cuts through the rich sauce, the tannins cleanse the palate.
  • Aged pecorino: the savory nuances of the wine play nicely against the salt and nutty notes of the cheese.

Tenuta San Jacopo ligt tussen Chianti Classico en Valdarno, op een landgoed met een villa uit 1750 en een naam die teruggaat op een stenen kapel die al op zestiende-eeuwse kaarten stond. In 2002 kochten drie broers uit Milaan het vervallen landgoed en bouwden het biologisch weer op.
