Quinta São Gião, Gião Pétillant Naturel Exclusive Edition 2020

A family business from Guimarães, in northern Portugal. This pet nat was released in December 2023 as a limited edition, made from 100% Arinto on granite soil. The bubbles are created in the bottle using the ancestral method.

What you smell
Scents of green apple and citrus, with a light bready note from the long aging on lees.

What you taste
Fresh, lively acidity that awakens your mouth, with soft and fine bubbles. Dry finish with a salty, stony undertone derived from the granite soil. Ready to drink now.

How it's made
100% Arinto, grown on granite. The fermentation of natural sugars is completed in the bottle (ancestral method). Due to the long aging on lees, the bottle has been disgorged to remove the sediment, making the wine clearer and crisper.

Serving
Serve chilled, between 6 and 8 degrees Celsius. Do not decant. A tulip-shaped glass will retain the bubbles longer.

Pairs well with

  • Fresh oysters: the salty undertone and fresh acidity complement the brininess of the shell beautifully.
  • Fried squid or tempura: the bubbles and acidity cut through the fat and keep everything light.
  • Soft goat cheese: the crisp, acidic wine balances the creaminess without overpowering it.
