Akrille, Grillo

Grillo is Sicily's white grape. The vinification is done entirely in steel with no wood. The result is a wine that retains the island's salty, sunny character without becoming heavy. A good choice if you want a white wine that stays fresh but still has character.

What you smell
White flowers and citrus. In the finish, pear, pineapple and a hint of jasmine emerge.

What you taste
Tight and fresh, with a salty, stony undertone that gives the wine flavor and length. The fruit remains clear, the finish is long and not tiring.

How it's made
Grapes harvested at the end of August. Short carbonic maceration, then fermentation in stainless steel at 15 to 18 degrees. Five months of aging in steel and about two months in bottle, so no wood: that explains the pure, fresh style.

Serve
Serve at 12 to 16 degrees. Decanting is not necessary.

  • Fried fish: the fresh acidity and salty notes cut through the fat and keep the bite light.
  • Roasted vegetables: the citrus and floral notes uplift mild vegetable dishes without overpowering them.

Akrille ontstond op een avond in New York, waar de Siciliaanse familie Cutrera en chef-kok en restaurateur Joe Bastianich besloten samen een wijnhuis te beginnen. Het staat op de plek van de oude druivenpers van de Cutrera's, in het hart van de enige DOCG van Sicilië.
