This Gavi comes from Piedmont, from vineyards on very old soils (limestone and sand, formed some 14 to 16 million years ago). 2025 was a demanding year with a lot of rain in spring and a warm finish, leading to fresh, aromatic fruit. The grapes grow without artificial irrigation.

What you smell
White flowers, green fruit and herbs, with a light hint of white pepper.

What you taste
Fresh acidity keeps the wine crisp and lively. Aging on its lees provides extra body and a soft, slightly creamy mouthfeel. Flavors of quince, apricot, and green mango, with a salty, stony undertone from the limestone soil. Medium-long, dry finish.

How it's made
100% Cortese, hand-harvested. After a short cold maceration of 12 hours in concrete tanks (to preserve freshness and aroma), a gentle pressing follows. Fermentation takes place in stainless steel. The wine then rests for 4 months on its lees, which gives it texture and balance.

Serving
Serve at 8 to 10 degrees Celsius. Decanting is not necessary. A standard white wine glass is sufficient.

  • Pan-fried sea bass with lemon: the fresh acidity cuts through the fish and enhances the citrus notes.
  • Asparagus risotto: the soft body from the lees aging complements the creamy texture.

Cascina delle Monache in Gavi is een boerderij die al op kaarten uit begin twintigste eeuw stond, en waarvan de naam teruggaat op een middeleeuwse pleisterplaats van kloosterlingen. Sinds 1978 draait het bedrijf om één druif: Cortese, voor Gavi DOCG.
