This Gavi comes from the estate's oldest vineyard, with vines over 45 years old. The soil dates back to the mid-Miocene period: limestone and sand that give the wine its saline, stony undertone. 2025 was a demanding year with a lot of rain and a warm finish, but yielded healthy, fresh fruit.

What you smell
Orange blossom and acacia, with a light hint of brioche.

What you taste
Lively and fresh, with citrus peel, elderflower, and kiwi. The fresh acidity keeps it crisp and drinkable, with a salty aftertaste from the soil. Medium length.

How it's made
100% Cortese from a single vineyard. The bunches are hand-picked, destemmed, and gently pressed. Fermentation lasts 20 to 25 days, mostly in stainless steel with 20 to 30% in barrels. This is followed by 6 months of aging on fine lees, which gives extra body and texture.

Serve
Pour at 8 to 10 degrees in a standard white wine glass. Decanting is not necessary.

  • Pan-fried sea bass: the fresh acidity cuts through the fatty fish and the citrus notes enhance the dish.
  • Asparagus risotto: the creamy texture of the wine (from aging on lees) matches the creaminess of the risotto.

Cascina delle Monache in Gavi is een boerderij die al op kaarten uit begin twintigste eeuw stond, en waarvan de naam teruggaat op een middeleeuwse pleisterplaats van kloosterlingen. Sinds 1978 draait het bedrijf om één druif: Cortese, voor Gavi DOCG.
