Cascina delle Monache, Nature Metodo Classico Pas Dosé 2023
This sparkling wine from Gavi in Piedmont is made from 100% Cortese grapes. The 2023 vintage came from an early harvest (September 9 and 10) after a warm, dry summer. Pas dosé means no added sugar, offering the pure essence of the grape and 24 months on the lees.
What you smell
Citrus and fresh green apple, with a floral hint of acacia. Underlying notes of subtle bread and toasted almond from the aging on lees.
What you taste
Dry and fresh, with a fine, persistent mousse of bubbles. The high acidity makes it lively without being sharp. The finish has a salty, stony undertone and is long-lasting.
How it's made
Hand-harvested Cortese, gently pressed as whole clusters. The first fermentation occurs in stainless steel, followed by five months on fine lees. In spring, the second fermentation takes place in the bottle using the classic method, with 24 months of aging on lees before disgorgement. The chalk and sand soils give the wine its salty freshness.
Serving suggestion
Serve chilled, around 8 degrees Celsius. Decanting is not necessary. Use a wider wine glass instead of a narrow flute to better appreciate the bread and almond notes.
