This Dolcetto comes from a young vineyard in Gavi, planted in 2016. The soil blends Cessole marl with river clay, which explains the wine's soft structure. 2025 was a demanding, warm year with a short harvest between September 7th and 15th.

What you smell
Wild blueberries and raspberries, with a hint of white pepper and sweet spices.

What you taste
Juicy red and blue fruits: raspberry, plum, and dark fruits. Fresh acidity keeps it lively, while the tannins provide a gentle grip without drying out your mouth. Medium length, with a subtle almond note on the finish. A wine to be enjoyed young and with pleasure.

How it's made
100% Dolcetto, hand-picked and destemmed. Approximately one-third fermented as whole bunches. Fermentation takes place in concrete tanks, spending about 10 to 15 days on the skins and then another 10 days off. Aged in stainless steel, bottled the following spring. No wood, so the fruit remains at the forefront.

Serving
Lightly chilled at 14 to 16 degrees Celsius. Decanting is not necessary. A regular Burgundy glass will suffice.

Cascina delle Monache in Gavi is een boerderij die al op kaarten uit begin twintigste eeuw stond, en waarvan de naam teruggaat op een middeleeuwse pleisterplaats van kloosterlingen. Sinds 1978 draait het bedrijf om één druif: Cortese, voor Gavi DOCG.
