The vines for this wine are between 50 and 75 years old. Old vines yield fewer grapes, but smaller grapes with more flavor. Their deep roots also make them less susceptible to extreme weather conditions.

What you smell
Citrus and green apple, with a hint of peach. In the background, a salty, stony note.

What you taste
Fresh, juicy acidity that keeps the wine crisp. The residual sugar (11 g/l) provides a slight roundness that balances the acidity. The blue slate gives a salty, stony undertone. Long, invigorating finish.

How it's made
100% Riesling from old vines on blue slate. Spontaneous fermentation with native yeasts, in stainless steel. Followed by a long aging on the lees, which gives the wine more body and depth.

Serving
Serve chilled, around 9 to 11 degrees Celsius. Decanting is not necessary. A somewhat larger white wine glass helps the aromas to fully express themselves.

  • Sushi and sashimi: the fresh acidity and salty note complement raw fish and rice beautifully.
  • Thai green curry: the slight residual sugar mitigates the spiciness without making the wine heavy.
