Carlo Schmitt, Köwericher Laurentiuslay Riesling Kabinett 2025

The Laurentiuslay is a steep, southwest-facing slope on the Moselle with grey-blue slate soil. The vines are 60 years old, which keeps the harvest small and concentrated. The deep slate soil gives the wine a recognizable character from this single vineyard.

What you smell
White peach, green apple, and a hint of citrus. Beneath that, a cool, stony note.

What you taste
Light-bodied with only 8.6% alcohol. The residual sugar provides a soft, fruity sweetness, but the firm, fresh acidity cuts right through it, keeping everything in balance. The result is a wine that feels sweet without being cloying, with a long, mineral, and stony finish.

How it's made
100% Riesling from 60-year-old vines. Spontaneous fermentation with wild yeasts in stainless steel, with long aging on the lees. This provides extra depth and keeps the fruit expression pure.

Serving
Serve chilled, around 8 to 10 degrees, in a regular white wine glass. Decanting is not necessary.

Pairs well with

  • Thai green curry: the soft sweetness counteracts the spiciness, and the acidity refreshes the coconut.
  • Smoked trout: the salty, stony note plays beautifully against the oily, smoky fish.
  • Young goat cheese: the fresh acidity cuts through the creaminess and keeps your palate fresh.
