Accornero, Fonsina

Accornero is a family business from Vignale Monferrato in Piedmont, a region primarily known for red wines. This blend of Chardonnay and Sauvignon Blanc has been made since 1999 from grapes from a vineyard at 195 meters altitude, with an eastern exposure, planted in 1985.

What you smell
Fresh apple, especially towards Reinette. Subtle white flowers in the background.

What you taste
Straw yellow in the glass, smooth and fruity on the palate. The finish has a salty, stony undertone that keeps the wine crisp. No malo, so the freshness remains intact. Easy to drink without being simplistic.

How it's made
Chardonnay and Sauvignon Blanc from a single vineyard in Vignale Monferrato. Gentle pressing with short skin contact. Fermentation and aging in stainless steel, no malolactic fermentation. Bottled in the spring after cold stabilization. Yield 70 hl per hectare.

Serve
Serve chilled at 6 degrees. Do not decant. A standard white wine glass is sufficient.

Pairs well with

  • Vitello tonnato: the fresh apple notes cut through the creamy tuna mayonnaise without overpowering the delicate veal.
  • Risotto with zucchini and lemon: the salty finish enhances the umami of the Parmesan and the citrus aligns with the wine's freshness.
  • Fried calamari: the briny undertone acts as a natural partner for fried seafood, similar to a squeeze of lemon.
