Bibi Graetz, Testamatta 2018

For Testamatta, Bibi Graetz works with Sangiovese from old vines, up to 80 years old, spread across various top locations in Tuscany. The idea: combine the best plots for a single cuvée with maximum complexity. 2018 was a stable growing season that yielded wines with natural balance.

What you smell
Ripe blueberries and blackberries, beneath them a layer of earthy notes and a slightly salty, stony undertone that adds depth.

What you taste
Intense dark fruit with a polished structure. The tannins are firmly present but feel velvety; they provide grip without drying out your mouth. The acidity keeps everything fresh, and the finish lingers long. Already accessible, but can age for years.

How it's made
100% Sangiovese from old vines. The grapes are hand-harvested in multiple passes to ensure perfect ripeness per bunch. Natural fermentation in open vats, followed by two years of aging in old wood to keep the fruit central.

Serve
16-18°C. Decanting is not strictly necessary, but a large glass helps to allow the layers to unfold.

Pairs well with

  • Roast leg of lamb: the slightly gamey character of lamb connects with the earthy notes in the wine, while the tannins balance the fat.
  • Risotto with porcini: the umami of the mushrooms enhances the depth of the wine, and the creamy rice dampens the structure.
  • Saltimbocca: the salty Parma ham and aromatic sage play together with the fruit and spicy undertone.

Toscane draait om Sangiovese, maar de streek is veel breder dan dat. Van de hooggelegen wijngaarden van Chianti Classico tot de zilte kust van Bolgheri: elke plek geeft de druif een ander karakter.
