SN35 Neri Etna Spumante DOC Millesimato

Sparkling wine from the slopes of Mount Etna, around Linguaglossa at an altitude of 700 to 800 meters. The vineyards are on volcanic soil and the vines are five to ten years old. Made from 100% Nerello Mascalese, vinified as white wine.

What you smell
White flowers and yellow peach, with a light hint of brioche and pastry.

What you taste
Fine, persistent bubbles and a fresh, juicy acidity that keeps the glass lively. The finish has a salty, stony undertone that reveals the volcanic soil. Balanced and crisp.

How it's made
Harvested by hand in small crates and carefully selected. First fermentation in stainless steel tanks at a controlled temperature of 15 to 16 degrees, fermentation lasting two weeks. Then second fermentation with selected yeasts for at least 36 months, which explains the fine bubbles and brioche note.

Serve
Serve chilled at 6 to 8 degrees. Do not decant. A tulip-shaped glass best preserves the mousse and aromas.

  • Oysters and raw shellfish: the salty undertone and fresh acidity mirror the salinity of the sea.
  • Shrimp risotto: the bubbles cut through the creaminess and keep each bite fresh.

Neri is een familiebedrijf op de noordoostflank van de Etna, opgericht ruim een eeuw geleden door Vincenzo, die met een fortuin uit Amerika grond kocht in Linguaglossa. De vierde generatie werkt er nog altijd op dezelfde negen hectare wijngaard en olijfgaard.
