Hommage a Gaston Burtin, Vintage 2015

A vintage champagne from six villages, 88% of which comes from Grand Cru and Premier Cru vineyards (including Le Mesnil-sur-Oger and Mailly-Champagne). 2015 was a warm, sunny year that retained its freshness due to coolness and rain at the end of August. Matured for more than seven years before opening.

What you smell
Citrus and some panettone, with a fresh touch. Behind that, brioche and toasted nuts from the long maturation.

What you taste
Sour apple and a biscuity, toasted flavour. The fine, intense bubbles give a creamy texture, while a fresh acidity balances the richness. Long, dry finish.

How it's made
53% Pinot Noir for structure, 47% Chardonnay for finesse. Grapes from six villages, mostly Grand and Premier Cru. More than seven years of bottle maturation, dosage of 6 g/l (brut).

Serving
Pour at 8 to 10 degrees into a slightly larger wine glass, not a narrow flute, so that the toasted aromas can fully develop.

Pairs well with

  • Pan-fried foie gras with onion chutney: the fresh acidity cuts through the richness of the liver, and the sweet chutney complements the biscuit notes.
  • Fresh ravioli with crab filling: the creamy texture and citrus notes elevate the sweet, delicate crab.
  • Fillet of red mullet with rosemary: the toasted nuts and the volume of the Pinot Noir stand up to the robust fish and herbs.
