Gaston Burtin, Hommage à Gaston Burtin Extra Brut 2019

This champagne comes from twenty villages across Champagne and matured for at least three years on the lees. The dosage is low (5 g/l), keeping the wine dry and crisp. 2019 was a challenging year with frost and drought, but the small harvest yielded well-ripened grapes with a fine balance between acidity and concentration.

What you smell
White fruit, a hint of acacia honey, and a light brioche note from lees aging.

What you taste
Orange peel and raspberry, with a fresh, citrusy opening. The low dosage keeps it dry and clear, with fine bubbles and a clean, refreshing finish rather than a sweet aftertaste.

How it's made
A blend of 40% Pinot Noir, 40% Meunier, and 20% Chardonnay, based on the 2019 vintage. At least three years of aging on the lees provides the brioche note and fine mousse. Low dosage of 5 g/l.

Serving
Serve at 8 to 10°C. Decanting is not necessary. Use a tulip-shaped glass to fully appreciate the aromas.

Pairs well with

  • Sushi: the fresh acidity and low dosage cut through rice and fatty fish without overpowering them.
  • Raw fish (sashimi or tartare): the citrus notes act like a slice of lemon with delicate fish.
  • Oysters and shellfish: the crisp, dry style enhances the salty taste without making it heavy.
