Es Fangar is an organic wine estate in the southeast of Mallorca, focusing on indigenous grapes from the DO Pla i Llevant. Sa Sivina is their white house cuvée, where the local Prensal Blanc and Giró Ros set the tone. In 2023, a portion of Viognier provides extra freshness and aroma.

What you smell
White peach, lemon peel, and some yellow flowers, with a subtle hint of vanilla and almond from the oak in the background.

What you taste
Juicy and fresh, with a pleasant roundness in the middle due to the short barrel aging. The acidity keeps everything crisp (5.9 g/l), and the finish is dry with a light salty, stony undertone typical of Mallorca.

How it's made
Blend of Viognier (42.5%), Prensal Blanc (30%), and Giró Ros (27.5%) from organically farmed plots. Briefly aged in oak, which adds complexity without overshadowing the fruit expression. Organic and vegan certified.

Serve
At 10 to 12°C, in a regular white wine glass. Decanting is not necessary.

  • Grilled sea bream with lemon and olive oil: the fresh acidity and slight saltiness perfectly complement white Mediterranean fish.
  • Risotto with zucchini and parmesan: the slightly creamy texture from the barrel stands up to the richness of the dish.

Es Fangar is een landgoed van duizend hectare tussen Felanitx en Manacor, waar de wijnbouw begin twintigste eeuw door de druifluis volledig verdween. Sinds 2004 zijn de wijngaarden herplant, met een bewuste combinatie van inheemse druiven als Giro Ros en internationale als Cabernet Sauvignon.
