Domaine Jean Collet, Chablis 2021

Domaine Jean Collet has been cultivating grapes in Chablis since 1792. This appellation wine comes from vineyards on Kimmeridgian soil, the famous clay interspersed with fossilized oyster shells that defines the character of good Chablis.

What you smell
Green apple, citrus zest, and a cool, stony undertone reminiscent of wet limestone after a rain shower.

What you taste
Crisp and vibrant with an acidity that keeps your mouth fresh without being sharp. The salty, mineral undertone adds depth to what is otherwise an uncomplicated, thirst-quenching wine. Short, clean finish.

How it's made
100% Chardonnay, fermented and aged in stainless steel tanks. No wood, so all attention goes to fruit and terroir.

Serve
Serve chilled, around 10-11°C. Decanting is not necessary. Best enjoyed now.
