Château Corton C., Ladoix 2015

Caroline Frey crafts this Ladoix from a minuscule 0.26-hectare plot in the Côte de Beaune. The 2015 is a ripe vintage that is drinking at its peak now, with the concentration characteristic of this year.

What you smell
Ripe cherries and strawberries, with an undertone of clove and cocoa.

What you taste
Silky smooth and full-bodied on the palate. The tannins are fully integrated, giving the wine roundness without grip. Juicy fruit balanced with a slight spiciness. The finish is elegant and long-lasting.

How it's made
100% Pinot Noir, hand-harvested. Matured in oak barrels for complexity and texture.

Serve
15-16°C. No decanting necessary, but a large Burgundy glass will allow the layers of aroma to fully express themselves.

  • Roasted rabbit with mustard sauce: the creamy sauce echoes the soft tannins, while the juicy fruit doesn't overpower the meat.
  • Parma ham: the saltiness and fattiness of the ham bring out the fruit and give the wine more length.

Bourgogne is de streek die het idee van terroir heeft uitgevonden: het geloof dat een wijngaard van een paar honderd meter verderop al een andere wijn oplevert. Met slechts twee hoofddruiven, Pinot Noir en Chardonnay, ligt hier de nadruk volledig op de plek in plaats van op de druif.
