Château Suduiraut, Sauternes 2022
Premier Cru Classé since 1855, located in Preignac next to d'Yquem. The 2022 comes from an extremely dry year with minimal yield: the botrytis concentration is exceptionally high, resulting in a wine with more depth than usual.
What you smell
Apricot jam, white blossoms, a hint of orange peel, and toasted almond. As the wine opens, more honey and ginger emerge.
What you taste
Full and oily on the palate, but never heavy. The sweetness is kept sharp by a citrusy acidity that gives the wine length. Long finish with candied fruit and a slightly bitter note, like orange marmalade. Can easily age for 30 years, during which the color shifts towards amber and the taste evolves into caramel and dried fruit.
How it's made
100% Sémillon, hand-harvested in multiple passes to select only grapes fully affected by botrytis. This fungus extracts water from the grape and concentrates sugars, acids, and aromas. Fermentation and aging in oak.
Serve
Well chilled between 10 and 12 degrees Celsius. A small white wine glass works better than a large Burgundy glass, so the sweetness doesn't overwhelm.
Pairs well with
- Foie gras with fig compote: the richness of the liver requires sweetness and acidity to cut through, precisely what this Sauternes delivers.
- Roquefort or Stilton: salt and sweet is a classic combination, and the creamy texture of blue cheese matches the oily mouthfeel.
- Tarte Tatin: caramelized apple and butter echo the honeyed notes of the wine, while the acidity makes the dessert feel lighter.
