Château Corton C., Aloxe-Corton Premier Cru 'Les Paulands' 2017

Les Paulands is located at the foot of the Corton hill, one of the most prized plots of land in the Côte de Beaune. Château Corton C. produces wines with a distinct character here. The 2017 is now seven years old and is beginning to show its aging potential.

What you smell
Dark berries and wild cherries, with earthy undertones. Beneath that, cloves and a slightly smoky accent from the oak.

What you taste
A firm wine with a full mouthfeel. Ripe red fruit is supported by tannins that provide grip without dominating. The structure is still there, the finish is long. Can be aged for years, but is also approachable now.

How it's made
100% Pinot Noir from the Premier Cru vineyard Les Paulands. Aged in oak barrels, which explains its structure and aging potential.

Serving
16-17°C. Uncork an hour beforehand or decant briefly to allow the wine to open up. A large Burgundy glass gives the aromas room to develop.

  • Roasted venison with red wine sauce: the gamey character of the meat harmonizes with the earthy notes in the wine, and the sauce creates a bridge.
  • Grilled entrecôte with wild mushrooms: the fatty texture of the meat balances the tannins, and the mushrooms echo the earthy notes.
