What do you smell
Ripe stone fruit like peach and apricot, with a bready tone of brioche resulting from the long aging on yeast.

What do you taste
Stone fruit and a hint of honey, with fine and persistent bubbles. The fresh acidity keeps it lively without becoming sharp, and the 8 g/L dosage provides just enough roundness for a smooth, approachable finish.

Blend of 53% Meunier, 26% Chardonnay and 21% Pinot Noir. The Meunier provides fruitiness, the Chardonnay freshness and the Pinot Noir structure. 49% reserve wines from a solera provide extra depth and consistency. Matured for at least three years in the cellar.

Serve chilled at 8 to 10 degrees. Do not decant. Use a slightly larger white wine glass to allow the aromas to unfold.

- Smoked salmon on toast: the fresh acidity cuts through the richness of the salmon and cleanses your palate.
- Oysters: the lively bubbles and freshness lift the briny, creamy texture.
- Fried chicken or tempura: the bubbles and acidity break through the crispy fat, refreshing each bite.
