Castel di Salve, Santimedici Verdeca

Verdeca is an ancient Puglian grape rarely found outside Southern Italy. Castel di Salve bottles it pure, without oak influence, allowing the fruit and freshness to speak for themselves. A white wine that proves Puglia is more than just heavy red wine.

What you smell
Juicy pear, a hint of exotic fruit like pineapple and passion fruit. Fresh and direct, no sweet perfume note.

What you taste
Smooth and balanced. Fresh acidity keeps the wine lively without becoming sharp. The finish is clean and crisp, without a bitter or heavy aftertaste. A wine to be drunk young.

How it's made
100% Verdeca from vineyards with 5200 vines per hectare, hand-picked in mid-September. Fermentation without skins at 16 degrees, followed by aging in stainless steel tanks. This keeps the fruit intact and the wine clear.

Serve
Serve at 8 to 10 degrees in a standard white wine glass. Do not decant.

  • Clams or spaghetti alle vongole: the fresh acidity cuts through the garlic-oil and lifts the salty shellfish.
  • Fried calamari with lemon: the pear and citrus notes seamlessly complement fried fish.

Castel di Salve in Depressa, Salento, werd in 1885 opgericht door Antonio Winspeare, hertog van Salve, en was het eerste wijnhuis van de streek dat zijn eigen wijn liet rijpen en bottelen. Vijf generaties later runnen Francesco en Riccardo Winspeare het nog altijd, met inheemse druiven als Negroamaro en Primitivo.
