Castel di Salve, Santimedici Rosso

Pure Negroamaro from Salento, the heel of Italy. Castel di Salve works with hand-picked grapes from traditional espalier vineyards. An accessible introduction to Puglia's typical red grape.

What you smell
Red fruit (redcurrant, raspberry) with a light spicy hint of cinnamon.

What you taste
Harmonious and juicy, with a savoury side that keeps it fresh at the table. The finish has a slightly bitter twist, characteristic of Negroamaro, which makes it more interesting than an average red.

How it's made
100% Negroamaro, hand-picked at the end of September. Fermentation at controlled temperature with 10 days of skin contact for colour and structure. Followed by malolactic fermentation and 6 months of aging in stainless steel, without wood, so that the fruit remains central.

Serving
Serve at 16-18 °C in a standard red wine glass. Decanting is not necessary.

  • Pasta with tomato sauce and minced meat: the freshness and red fruit pair beautifully with tomato, the slightly bitter edge cuts through the fat.
  • Grilled lamb chops with rosemary: the spicy note in the wine picks up the rosemary, while the structure can handle the meat.
  • Aubergine parmigiana: the juiciness matches the melted cheese and tomato, the bitter note balances the sweet aubergine.

Castel di Salve in Depressa, Salento, werd in 1885 opgericht door Antonio Winspeare, hertog van Salve, en was het eerste wijnhuis van de streek dat zijn eigen wijn liet rijpen en bottelen. Vijf generaties later runnen Francesco en Riccardo Winspeare het nog altijd, met inheemse druiven als Negroamaro en Primitivo.
