A Fiano from Salento, the heel of Italy's boot. Castel di Salve meticulously cultivates this grape, with cold pre-fermentation to preserve the aromas and five months of aging in steel for a crisp finish.

What you smell
Delicate white flowers, mango, white peach and a hint of citrus zest.

What you taste
Straight and dry, with a clean, almost salty undertone that balances the fruity side. No fat, no sweetness, a finish that ends short and bright.

How it's made
100% Fiano, hand-picked in early September. A week of cold pre-fermentation to bind the volatile aromas, then three weeks of fermentation at 17 degrees and a week of bâtonnage on the yeast cells. Malolactic fermentation and five months of aging in stainless steel, which preserves freshness and slightly rounds out the texture.

Serve
Serve at 8 to 10 degrees in a medium-sized white wine glass. Decanting is not necessary.

Castel di Salve in Depressa, Salento, werd in 1885 opgericht door Antonio Winspeare, hertog van Salve, en was het eerste wijnhuis van de streek dat zijn eigen wijn liet rijpen en bottelen. Vijf generaties later runnen Francesco en Riccardo Winspeare het nog altijd, met inheemse druiven als Negroamaro en Primitivo.
