Castel di Salve, Centino Primitivo

A Primitivo from Salento, the heel of Italy, where warm summers and sea breezes create ripe, concentrated grapes. The wine matures for six months in used Allier barriques and then three months in steel, an approach that adds roundness without overshadowing the wine with oak notes.

What you smell
Dark fruit such as blackberries and black cherry, with spicy notes and a fresh balsamic touch.

What you taste
Full and enveloping on the palate, with ripe dark fruit and a slight spiciness. The structure is firm but smooth: sufficient grip without feeling dry. The finish has a salty, savoury twist that keeps the wine palatable.

How it's made
100% Primitivo, hand-harvested in mid-September from vineyards with 4000 vines per hectare. Fermentation at controlled temperature with 15 days of skin contact. Malolactic fermentation and aging in used Allier oak barriques (6 months), then 3 months in steel and at least 2 months in bottle.

Serving
Serve at 18 °C in a large Burgundy glass. Decanting is not necessary; simply opening it a little beforehand is sufficient.

Pairs well with

  • Grilled lamb chops with rosemary: the spiciness of the wine picks up the rosemary, and the firm structure stands up to the fatty lamb.
  • Pasta with sausage ragu and fennel seeds: the ripe dark fruit complements the fatty sausage, while the savoury finish balances the tomato.
  • Aged Pecorino: the salty, spicy cheese finds its counterpart in the wine's salty note and full fruit.

Castel di Salve in Depressa, Salento, werd in 1885 opgericht door Antonio Winspeare, hertog van Salve, en was het eerste wijnhuis van de streek dat zijn eigen wijn liet rijpen en bottelen.
