Caroline Morey, Chassagne-Montrachet Chambrees 2022

Caroline Morey has been running her own estate in Chassagne-Montrachet since 2014, in addition to her work at the family business Domaine Jean-Marc Morey. The lieu-dit Chambrees is located on the slopes towards Saint-Aubin. Calcareous soils that produce white Burgundy with tension and precision.

What you smell
Lemon peel, white peach, and a hint of toasted bread. Beneath that, something floral, reminiscent of acacia.

What you taste
Silky smooth texture with a taut acidity that gives the wine direction and length. The fruit is juicy but restrained. The finish lingers with a salty, stony undertone. Already approachable, but can age for another five to eight years.

How it's made
100% Chardonnay, hand-harvested. Matured in oak barrels, about 25% of which are new. This proportion gives subtle toast aromas without overpowering the fruit.

Serving
Between 10°C and 12°C. Large, tulip-shaped glasses allow the aromas to develop. Decanting is not necessary, but allow it to warm up slightly if it's just out of the fridge.

Pairs well with

  • Pan-fried sole with lemon butter: the rich texture of the fish and butter finds balance in the wine's freshness.
  • Wild mushroom risotto: the creaminess matches the silky mouthfeel, the earthy mushrooms complement the subtle toasty notes.
  • Young Comté: the nutty cheese enhances the fruit without overshadowing its finesse.
