Bibi Graetz, Testamatta 2022

Bibi Graetz started as an artist, but gained fame as a winemaker who redefined Sangiovese. Testamatta ("crazy head") is his flagship: grapes from six high-altitude, windy vineyards in Tuscany, where the cool conditions ensure slow ripening and preservation of freshness. A wine that proves Sangiovese doesn't have to be heavy to be serious.

What you smell
Fresh strawberries, cherries, and raspberries. No heavy toast aromas, pure fruit with a hint of flowers.

What you taste
Silky smooth on the palate, with tannins that offer little grip but provide structure. The acidity keeps everything lively and prolongs the flavor. No bombast, but precision. Drink now for the fruit, or cellar for five to eight years.

How it's made
100% Sangiovese from hand-selected grapes. Natural fermentation in open vats, followed by 18 months of aging in old oak barrels. No new wood, so the fruit remains central.

Serve
16-18°C. Decanting is not necessary, but a large Burgundy glass will allow the delicate aromas to unfold.

Pairs well with

  • Pappardelle with duck ragù: the freshness of the wine cuts through the fat, while the red fruit complements the gamey notes.
  • Roasted quail with rosemary: light poultry that doesn't overshadow the wine's elegance.
  • Risotto with porcini: the earthy mushrooms connect with the subtle spicy undertones.
